Jam filled Cookie Recipe

So recently we made jam filled cookies, and they were really good. So we thought why not share the recipe with you! (the dough was a little crumbly so we just added a little bit of water to the dough, it didn’t effect the flavour at all.)
Ingredients: 125g margarine, 250ml castor sugar, 1 egg, 5ml vanilla essence, 500ml flour, 10ml baking powder, pinch of salt, jam, icing sugar for dusting.
- Cream together margarine and castor sugar.
- Beat in egg and essence till light.
- Sift in flour, baking powder and salt, mix well till blended.
- Form into balls and place slightly apart on a greased baking tray
- Make a small hollow in the centre with the end of a wooden spoon.
- Place a spoonful of jam in the hollow
- Bake at 190 degrees Celsius for 10-12 minutes
- Allow to cool and sift icing sugar over the cookies.
